Black and Blue Ahi Sashimi

Ingredients:

2 oz Yellow Fin Tuna — cut in blocks

Spices:
– 1/2 tbs cumin
– 1 tbs oregano
– 1 tbs thyme — Mix all ingredients
– 1 tbs dry mustard — together
– 1 tbs cayenne pepper
– 1 tbs black pepper
– 1 tbs paprika

Mustard Sauce:
– 6 oz Grey Poupon Mustard — Mix all ingredients
– 3/4 can lite soy sauce — in a bowl. Transfer
– 1/4 tbs Coleman’s Dry mustard — to a bottle, Shake well.



Methods:
Vegetables:
– 1 med green bell pepper — sliced julienne styl
– 1 med red bell pepper — julienned
– 1/2 med Spanish onion — sliced thin
– 1 tsp oregano
– 1/2 tsp white pepper
– 1/2 tsp salt
– 3 tbs olive oil

– Heat olive oil in saucepan, combine all ingredients, saute for one – two minutes.
– Preparation of all tuna:
– Season the yellow fin tuna with spices on all four sides.
– Sear tuna on all four sides in a pre-heated hot pan with 4 tbs. of olive oil. Slice the cooked tuna 1/4 of an inch thick.
– Place the sliced tuna on a dinner plate spreading the tuna from one end of the plate to the other. Place the cooked vegetables next to the tuna with the mustard sauce in the corner.
